This weekend I delved into recipes online once again and decided to try cooking Lemon and Coconut Cakes. I’ll link back to the recipe at the end of my post.
The method was straight forward and easy, I’d recommend this to anyone that loves lemon and coconut. I added a little more coconut and lemon than listed below as a few reviews indicated that it was quite bland despite having an average of 4/5 stars by 90ish members! It was delicious and something that i’d definitely bake again!
I’d love to hear from any more experienced bakers than myself – I cooked the cake, it tasted lovely however I was disappointed the outer edge had started to burn ever so slightly, the outside of the cake had cooked more than the centre even though it tasted perfect. Could this be because I was using a top oven? Any comments / suggestions are appreciated to help improve my baking!!
- 250g butter
- 430g (2 cups) caster sugar
- 4 eggs
- 225g (1 1/2 cups) plain flour
- 85g (1 cup) desiccated coconut
- 3 teaspoons finely grated lemon rind
- 60ml (1/4 cup) fresh lemon juice
- Icing sugar, to dust
